Ellen Thomas is an expert in food safety and risk communication. , She contributes to projects that address food safety throughout the farm to fork system with a diverse experience in mixed-methods research. She also contributes to the development of risk-ranking and hazard evaluation tools that help inform risk management decisions related to food safety.

Dr. Thomas often works on projects serving the U.S. Food and Drug Administration and the U.S. Department of Agriculture. Currently, she is contributing to multiple meal preparation experiments related to consumer food handling behaviors and behavior change. 

Dr. Thomas is also leading the development of a food safety training platform that uses 360-degree video to create an immersive experience for users.

Dr. Thomas joined RTI in 2015. She is a member of the International Association for Food Protection and the Conference for Food Protection.
